Why I love these stuffed peppers
These are vegetarian stuffed peppers filled with quinoa and feta. They make an easy and great weeknight dinner. Stuffed peppers are definitely a dish for the creative chef as they offer endless possibilities of flavor combinations. Filled them with what you love or any leftovers.
The Ingredients List
This recipe requires a few ingredients. Make this recipe your own, using ingredients that will make your taste buds happy or try one of my suggestions below.
Peppers : they are the perfect vessels for our filling. Substitute at your own risk :) !
The filling : My filling is made out of diced tomatoes, almond flour and quinoa. Many recipes call for rice or beans.
Olive Oil : mainly used to roast the peppers
Spices and Condiments : Salt, peppers and Mediterranean herbs + crushed garlic
Honey - No need for the honey but it adds a lovely touch of sweetness.
Feta : add a delicious tanginess to the dish. If you prefer, you could use goat cheese, any other cheese you like or none at all.
