Peanut Butter Oatmeal Cookies
Why I love this recipe
I find joy in mixing basic ingredients in my kitchen and turning them into a delicious treat. I made this recipe from scratch by guessing quantities that would make sense. I had a vague idea of what I wanted my cookies to be : oaty, peanut buttery and quick and easy to bake. After a couple of trial and error and some adjustments, I can say that I am quite happy with the result.
Quick and easy to bake, lightly sweetened, these cookies are soft, chewy and very satisfying. They are also packed with a delicious peanut butter flavour. These cookies are a great on-the-go snack and…a great breakfast as well. Yes, breakfast. Guilty !

Oats flakes : I used oat flakes rather than flour simply because the flakes bring texture to the recipe.
Peanut Butter and mashed banana are used as the binding ingredients. Swap the peanut butter for your favourite nut butter and the banana for some apple puree for example.
Coconut oil, which can be replace by some sunflower oil …
I used a bit of maple Syrup and dark sugar to lightly sweetened the cookies. it is definitely not a necessity, but it had the sweetness I need my cookies to have.
Baking Powder and baking Soda add some lightness and fluffiness to the cookies
Cinnamon & Vanilla Extract bring an extra and subtle taste to your cookies
