Vegan Energy Bites
Why I love these energy bites
I am always looking for delicious and satisfying snacks that I can easily make at home. I also love small kitchen experiments. That´s why, a few weeks ago, I decided to combine a couple of ingredients together and hope for the best. After combining them with the help of my food processor and with a few adjustments, I realised that I had just created a delicious treat for myself. And since sharing is caring… :-)
These bites are chewy, nutritious and have a nice sweetness to them without being overly sweet. I really enjoy them before my workouts. Get ready for a delicious and nutritious bite-sized on-the-go snack.
This recipe requires few ingredients. Make this recipe your own, by adjusting ratios or using ingredients that will make your taste buds happy.
The base : Oats , almond Flour, flaxseed
The binding ingredients : Peanut Butter, a splash of water and dates. You could also use any nut butter, a plant-based milk, dried fruits like apricots or figs.
The extras : I kept it very simple with the extras by only adding a bit of cinnamon and a pinch of salt to subtly enhance the taste of the energy bites. Play around with adding other ingredients into the mix like chocolate, cocoa nibs, desiccated coconut flakes, seeds or nuts for more taste and texture.
Tips & Tricks
1. If your mixture is too dry and crumbles, add some of the binding ingredients. If you don´t want to alter the taste too much, I advise on adding water or a plant-based milk.
2. Pressing the mixture firmly on the tray is key to avoiding a crumbling disaster.
