Easy Creamy Strawberry Popsicle

Why we love Popsicles

Popsicle are like heaven on a stick. Whatever the weather, this delicious frozen treat never seems to disappoint me. Ice-cream and Popsicle are a year-around staple for me. There is not a good enough reason to say goodbye to these treats as the temperature lower downs. But they definitely taste better on a hot sunny day !

As store-bought Popsicles are mainly frozen sugar syrup, I tend to make mine at home. It is quite easy to turn them into an healthy(-ish) snack by using fresh fruits and some nutritious ingredients like yoghurt. Then Popsicle can help reach your daily fruit intake in a fun and healthy way without any sugar overload.

I love the simplicity of this recipe. It requires very few steps and is quite fun to make. Any fruits you like can be used to make Popsicles. There is no strict rules.

The Ingredients

This recipe requires very few ingredients : fresh or frozen fruits, a liquid (milk, juice, coconut water,...) and a sweetener which is even optional. I decided to use strawberries as they are the juicy fruit in season at the moment. I then like to puree the fruits with some fresh lime and orange juice to infuse the flavour to the Popsicles. In another bowl, I have mixed the fresh cream with the yoghurt for some extra creaminess. It also add a bit of nutritional value to the treat. I used vanilla extract to flavour my yoghurt but this step is optional. I then use honey for its sweetening property and for its quite distinctive flavour that compliment the rest of the recipe. I didn't use a lot of as I prefer my Popsicles lightly sweetened.

To make this recipe your own simply use the fruits and ingredients you like or have on hands. Strawberries and orange can be replace by your favourite fruits, the yoghurt and cream can be replace by your favourite milk or by nothing at all. You could use sugar, agave syrup or maple syrup to sweetened your popsicles instead of honey. Shredded coconut, granola, sliced fruits can add some texture to this snack. So many ingredients, so many possibilities.

Tips & Tricks

Tip 1 : This recipe is very forgiving. If anything goes wrong, simply adjust it to your taste.

Tip 2 :  If you don't have Popsicle molds, use small cups and stick a stick in it. That will do the trick.
