Why I love making my own chocolate bar

I definitely have a sweet tooth. That’s why I am constantly on the search for indulging and quite overly sweet treats. Unfortunately, splurging on candies and other way too sweet treats, too often is not an option. I came across a couple of recipes for homemade chocolate barks, which sounded like a better way to satisfy my sweet tooth. So, I decided to make my own using two of my favourite ingredients: Cranberries, to add some sweetness to the bitterness of the dark chocolate, and cashew nuts, for the crunch. I find these two the be a great duo.

Quick and easy, all you need is 3 ingredients to make this recipe. A bit decadent but this treat tastes like heaven.

This recipe requires very few ingredients. That’s why the quality of this snack highly depends on the quality of your ingredients. So choose wisely.

  • Chocolate: Dark chocolate is your best choice. As we are going to sprinkle some cranberries on it, we don’t want a chocolate that is already too sweet. I used 73% dark chocolate for this recipe. I also had great success with a 85% dark chocolate.

  • The extras: Cranberries and cashew. Two of my favourite extras. Swap them for anything else you like, Gobi berries, coconut flakes, pumpkin seeds, ... You name it.

Tips & Tricks

  1. If you’d like your chocolate to be shinny and snappy, I’ll definitely advise on tempering it.

  2. To avoid the chocolate from sticking to your baking tray, don’t forget to line it with parchment paper.

  3. I used a double boiler to melt my chocolate but feel free to use the microwave instead.
