Why we love Chia Seeds Pudding

Chia seeds caught the interest of many people thanks to their health benefits. They are a rich source of nutrients and antioxidants. They also have an amazing absorption power. Therefore, this recipe calls for a small quantities of chia seeds. Also, when they are mixed with a liquid, they reach a gel-like texture.

A Chia seed pudding makes a filling and satisfying breakfast.  It's delicious and creamy and it gives you the protein, fibre and fat you need to start your day.

As always, you can easily tweak this recipe to make it your own. Start with the basic recipe and add any ingredient you like.

The Ingredients

The recipe starts by combining the chia seeds with a liquid, usually water, milk or some yoghurt. Chia seeds have a neutral taste, mixing them with a flavoured milk (coconut, almond milk, ...) will give some taste to the pudding.  To add a bit of sweetness, you could use some honey or maple syrup.  Add some extras (fruits, nuts, seeds,...) set aside for 15-20 minutes and voilΓ  !

The chia seeds to liquid ratio is about experimenting what works for you. I'll suggest a 1 portion of chia seeds for 4 to 6 portions of liquid ratio to reach a creamy pudding consistency ( Ex : 10 g of chia seed for 40g to 60g of liquid).

For this recipe, I opted for some Greek yoghurt as my liquid of choice. Instead of adding a sweetener, I went for a raspberry puree at the bottom of the jar to satisfy my sweet tooth (#Guilty). I then added a mix of seeds ( sunflower, pumpkin, sesame seeds) and some pomegranates as toppings. I'll admit I added the pomegranates just to make my breakfast look even better. I am one of those people that eat with their eyes... (guilty again)

Tips & Tricks

A Chia seed pudding is the perfect breakfast for meal prep lovers. You can make a big batch all at once, let it set overnight and enjoy the puddings for a couple of days.

Also, chia seed is a very versatile seeds that can be used as a topping on smoothies, soups or in salad for a bit of crunch.
